Scrumptious Scones


Thanks to Michell and the chilly weather the past couple days, I have been wanting to make some scones, but I didn't want to have to use a ton of butter and cream. Having never made scones before (I have to admit I am not much of a baker, probably because my sister and brother are), I didn't know what to expect, so I tried two recipes that turned out completely different, but delicious nonetheless.


Date and Maple Scones
wildly adapted from Cooking Light
makes 8 scones

1/2 cup whole wheat flour
1/2 cup all-purpose flour
3/4 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
2 Tbs. cold margarine
1/4 cup oatmeal
1/4 cup chopped dates
1/4 cup chopped raisins
1/4 cup low-fat vanilla soy milk
1 1/2 Tbs. maple syrup

1. Preheat oven to 400.
2. Combine first 5 ingredients in a bowl; cut in margarine with a pastry blender. Add oatmeal, dates and raisins and mix just until combined.
3. Combine soy milk and maple syrup in a separate bowl. Add to flour mixture and stir just until moist.
4. Turn dough onto a lightly floured surface and knead a couple times. Form into a circle of desired thickness and place on a greased baking sheet. Score dough into 8 wedges.
5. Bake for 15 minutes or until golden. Yum.

Blueberry Scones
adapted from Martha Stewart
makes 12 scones

1 1/2 cups all-purpose flour
3/4 tsp baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/4 cup agave nectar
5 Tbs. margarine
1/2 cup buttermilk
1 egg white
1 cup fresh blueberries

1. Preheat oven to 400.

2. Combine dry ingredients in a bowl. Add agave nectar and margaine and combine with a pastry blender. Mix in buttermilk and egg white until combined.
3. Carefully incorporate blueberries until dispersed.
4. Plop dough onto a greased baking sheet and pat into a circle with hands. Bake 8 minutes. Remove from oven and score into 12 wedges. Continue baking for about 8 minutes or until golden.
