Zesty Zucchini

Summer at my house always means tons of fresh produce from the garden, sitting on the counter just begging you to enjoy it. A few days ago, the zucchinis and summer squashes began to ripen and I have been looking for some fresh and light ways to use them. The combination of the sharp cheese, sweet basil and crunchy almonds was delicious.


Zucchini and Squash Toss

1/2 medium zucchini
1 small yellow summer squash
1 tsp. grated Parmesan cheese
1 tsp. chopped basil
1/2 Tbs. sliced almonds

1. Coarsely chop zucchini and squash, place in a small bowl with a little water, cover, and microwave for 1 1/2 minutes.
2. Drain (if necessary) and top with cheese, basil, and almonds.
3. Enjoy!
